For this week’s Dish It Your Way challenge, I am tackling potato salad! I, for one, hate mayonnaise and eggs… *ducks head*! So, I don’t really care for many potato salad dishes. My mother-in-law does make a potato salad that is virtually famous. So, when they came to visit last week, for the 4th of July, I could have simply asked her to make it. However, I like being in the kitchen and I love to dish out new dishes to wow my guests. So, I told my in-laws to sit back and relax as I create a feast for them. This was actually the very first time that I have actually cooked for my in-laws, being only married for two years. So, the pressure was on! Being from Texas, I have to put a spicy twist to pretty much everything. So, why not potato salad? This one is a keeper for sure! I added the zing of red onions, nixed the eggs, and added a component that I actually used when creating my Fried Chicken recipe. Yes, that amazing Buttermilk Chipotle Ranch dressing makes a return to make a delicious potato salad that wowed my in-laws. This potato salad is a lot more figure friendly as well, since the fattening mayo and eggs aren’t in this dish! I hope that you take this recipe and use it to win over yours. Who knows, if your not currently on good terms with your in-laws, this might turn the tide! I wouldn’t know, I have amazing in-laws. I’m one lucky gal!
Ingredients:
- 8 red potatoes diced
- 1/4 cup red onion diced
- 1/3 cup Chipotle Ranch dressing
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Spicy Coarse Mustard
- 1 tbsp of Worcestershire Sauce
- Salt and Pepper to taste
Steps:
1. First, you need to boil the potatoes. See America’s Test Kitchen’s tips for the best boiled potatoes!
2. In a small mixing bowl, combine the dressing, olive oil, Worcestershire sauce, and mustard.
3. Toss the potatoes with the dressing mixture, add salt and pepper to taste, and the red onion.
4. Either chill or serve warm! My favorite way to eat it is warm!
